Introduction of this recipe
This is a sort of Japanese traditional recipe, called “Nuta” (meaning vinegared miso salad).
This vinegared miso salad is usually prepared as a side dish. You can also enjoy this one as an appetizer for “Japanese Sake”. As both of them (Miso and Sake) are made from rice, most of the people would think this is a perfect match!
This recipe is also recommended for vegan, as this one is all made only from plant-based ingredients.
Japanese Vinegar Miso Salad
Ingredients
Main
- 1 stalk Green onion "Kujo" green onion would be the best for this recipe
- 1 tbsp White miso or brown miso depending on your preference
- 1/2 tbsp Rice vinegar or other malt vinegar depending on your preference
- 1/2 tbsp Beet sugar or brown sugar
Toppings, etc (up to you!)
- Ground sesame
- Thinly sliced green onion (called white-hair sliced green onion in Japanese)
Instructions
1.Prep (Green onion)
- Boil green onions with salt water (0.5~0.8%).
- Then, cut them into pieces (3~4cm long).
2.Prep (Vinegar miso)
- Stir white miso, rice vinegar and beet sugar.
- You can add salt if that suits to your taste.
3.Mix ingredients and serve
- Mix 1 with 2, then serve as you like.
Notes to this recipe
Low sodium
You can add salt as you like as long as you are not under dietary control.
